Asparagus and Pancetta Pesto Pizza is fancy for your face. Check out that edamame!
This pizza. What is going on here? Other than a pound of shaved asparagus, adorable shelled edamame, and porky pancetta? Pesto sauce. Your mind wants to melt. Let it. Have you ever had asparagus on a pizza? Or edamame? What about pancetta? What is pancetta anyway? I can answer that, itโs fancy bacon. Kind of like prosciutto. Kind of like bacon. Itโs bacon.
For the last two weeks, Iโve had an influx of pesto sauce in my house and needed a gateway for getting it into my mouth (#firstworldproblems). Being as it is spring, I was in the mood for a spring-inspired pizza. So I whipped out the olโ ย Bobโs Red Mill Gluten Free Pizza Crust Mix and shaved up some asparagi. It all comes together like a little prayer. You have the fresh parmesan-y pesto with the asparagus ribbons, snappy little edamamers and the salty, oh-so-fatty pancetta. Itโs like a bloominโ circus in your mouth.
Remember when I made that Spring Salad with Shaved Asparagus and Lemon-Parsley Dressing? Similar idea. Asparagus is so fun when itโs all ribbon-ed up.

So much green on this pizza!!! I love it. And Iโm sure putting pancetta on the.boyโs half would convince him to love it as well. Win/win.

How nice of you to help Stephanie. I read your โabout meโ section and yes I think I will follow your site and see what you are up to. Lots of bakers out there. I am developing a love for artisan pizzas. They offer such an easy way to try out quickly flavor comboโs and to serendipitously use whatโs lurking without a potential home in your fridge our cupboard.
This is an excellent example. Just glanced over to the side and noticed a post for thai salad and curry coconut dressing. Gotta go and check that out.

I couldnโt agree more! I seriously can eat it by the spoonful, and recently my favorite placement for it (other than pizza) is scrambled eggs. May sound strange, but itโs SO good!

This pizza is a big draw for me as I just discovered edamame. So I discovered edamame for the first time in a Wendyโs salad. Thatโs okay, because Iโm not a food blogger!!
And you used asparagus? I always buy asparagus and if I donโt roast it, it turns into liquid form in my rotter (aka the fridge!). Always need ideas to incorporate asparagus in my diet!
Not so with bacon, or fancy bacon, pancetta as you called it. Nothing says Motherโs Day like the smell of bacon wafting down the stairs being cooked by my husband!
Wahoo! Iโm so glad you like the recipe! Edamame is lots of funโฆI love both the texture and the flavor, so Iโve been using it in more of my salads and stir frys to add some spunk. I have a tendency to leave asparagus in my rotter for too long too, so this pizzaโs the perfect solution since it uses so.dang.much.asparagus!! Hope you enjoy the pizza! Go get that bacon! ๐
